Step one: Once you see the emergency call screen on your iPhone, all you need to do is to tap on the Stop button (x) at the bottom of the screen
Step two: Next up, you need to tap on the Stop Calling button from the pop-up menu. Once you are done, this will prevent your iPhone from making an emergency call.
In reality, there is a very simple way for minimizing the chance of activating Emergency SOS accidentally on your iPhone, Here is how you can do this:
Step one: Open the Settings app and head to General
Step two: Once you are in, tap on Emergency SOS and head to Click Sleep/Wake section and choose Five times
Once you are done, you will need to press the sleep/wake button every time you want to activate the feature on your iPhone. It may not be the perfect solution, but it will reduce chance of activating Emergency SOS feature when you least expect.
